Ingredients
  

  • 2 medium Russet potatoes (or Yukon Gold), washed
  • 1 tbsp olive oil or avocado oil (optional but recommended)
  • 1/2 tsp salt
  • 1/4 tsp paprika (optional)
  • 1/4 tsp garlic powder (optional)
  • 1/4 tsp chili powder (optional)

  • 1 Mandoline slicer or sharp knife
  • 1 Large bowl
  • 1 clean kitchen towel or paper towels
  • 1 Tongs or spatula

Method
 

  1. Wash the potatoes and slice them very thin (about 1 to 2 mm thick). Keep the slices as even as possible for consistent cooking.
  2. Place the slices in a bowl of cold water and soak for 20 to 30 minutes to remove excess starch.Drain, rinse, and dry thoroughly using a clean towel.
  3. Add the dried potato slices to a bowl. Toss gently with olive oil, salt, and any optional seasonings until lightly coated.
  4. Place the slices in the air fryer basket in a single layer. Do not overcrowd. Cook in batches if needed.
  5. Air fry at 350 to 360°F (180°C) for 15 to 18 minutes.Shake the basket or flip slices halfway through for even cooking.
  6. Remove once the chips are golden and crisp. They will continue to firm up slightly as they cool.
