Ingredients

  • 1 lb thinly sliced beef (shaved beef or sirloin strips)
  • 4 hoagie rolls or ciabatta rolls
  • 4 slices provolone cheese
  • 1 medium onion, thinly sliced
  • 1 small green bell pepper, sliced
  • 2 tbsp olive oil
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper (freshly ground)
  • 1/4 cup horseradish sauce, mustard, or garlic aioli (optional)

Method

  1. Step 1:
Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
Add thinly sliced beef in a single layer.
Season with salt and black pepper.
Cook for 2 to 3 minutes, stirring occasionally, until browned and just cooked through.
Remove from skillet and set aside. Avoid overcooking to keep the beef juicy.
  2. Step 2:
Add remaining 1 tablespoon olive oil to the same skillet.
Add sliced onion and bell pepper.
Cook for 4 to 5 minutes until soft and lightly caramelized.
    Stir occasionally to prevent burning.
  3. Step 3:
Slice hoagie rolls in half horizontally.
Layer cooked beef evenly onto the bottom half of each roll.
    Add sautéed onions and peppers.
Place one slice of provolone cheese on top of each sandwich.
Place sandwiches under a broiler for 1 to 2 minutes OR cover skillet until cheese melts.
Add optional sauce if desired and close the sandwich.
    Serve immediately while hot.

Notes

  • For a shredded beef sandwich variation, use chuck roast cooked in a slow cooker and shred before assembling.
  • For a French dip style, serve with warm beef broth for dipping.
  • Toasting the bread lightly before assembling prevents sogginess.
  • You can substitute Swiss or mozzarella for provolone.
