Ingredients
  

  • 2 to 3 lbs beef short ribs
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Heat a large skillet over medium-high heat. Sear the beef short ribs on all sides for 2 to 3 minutes until browned. This adds a deeper, caramelized flavor.
    You can skip this step if short on time.
  2. Place the beef short ribs into the slow cooker. Add sliced onion and minced garlic on top.
  3. Pour in beef broth, tomato paste, Worcestershire sauce, and red wine (if using). Sprinkle salt, pepper, and thyme.
  4. Cover and cook:
    LOW for 7 to 8 hours (best for tender texture)
    HIGH for 4 to 5 hours
  5. Once done, the ribs should be fork-tender and easy to pull apart. Serve hot with sauce spooned over the top.
