Ingredients

  • 200 grams (7 oz) Pasta (penne, spaghetti, or any shape)
  • 3 tbsp Unsalted butter
  • 4 cloves Garlic, finely minced
  • 1 tsp Olive oil (optional, prevents butter burning)
  • 1/2 tsp Salt (adjust to taste)
  • 1/4 tsp Black pepper
  • 1/4 cup Reserved pasta water (as needed)
  • 2 tbsp Parmesan cheese, finely grated (optional)
  • 1/4 tsp Red chili flakes (optional)
  • 1/2 tsp Dried parsley or mixed herbs (optional)

Equipment

Method

  1. Cook the Pasta
Bring a medium pot of water to a boil. Add salt and cook the pasta according to package instructions until al dente. Reserve 1/4 cup pasta water, then drain.
  2. Make the Garlic Butter Sauce
In the same pot, heat butter and olive oil over low to medium heat. Add minced garlic and cook for 30 to 60 seconds, stirring constantly, until fragrant (do not brown).
  3. Combine and Finish
Add cooked pasta to the pot. Toss well to coat in the garlic butter. Add reserved pasta water a little at a time until the pasta looks glossy and lightly sauced.
  4. Season and Serve
Season with black pepper, optional chili flakes, and herbs. Remove from heat and finish with Parmesan if using. Serve warm.
