Ingredients
  

  • 2 chicken breasts (sliced into thin cutlets) (For the Chicken)
  • 1 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 hoagie rolls or ciabatta bread (For the Sandwich)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic (minced)
  • 1 tbsp butter (for toasting bread)

Method
 

  1. Slice the chicken breasts into thin cutlets. Season both sides with salt, pepper, and Italian seasoning.
  2. In a bowl, mix panko breadcrumbs and grated parmesan cheese.
    Press each chicken piece into the mixture until fully coated.
  3. Heat olive oil in a skillet over medium heat.
    Cook the chicken for 4 to 5 minutes per side until golden brown and crispy.
    Optional methods:
    Air fryer: 375°F for 12 to 15 minutes
    Oven: 400°F for 18 to 20 minutes
  4. Spoon a small amount of marinara sauce over each cooked cutlet.
    Sprinkle mozzarella cheese on top and let it melt until soft and bubbly.
  5. Spread butter and garlic on the inside of the bread.
    Toast lightly in a pan or oven until golden.
  6. Layer the sandwich as follows:
    Toasted bread
    Light marinara sauce
    Crispy chicken cutlet
    Melted mozzarella
    Serve immediately for the best texture.
