Ingredients

  • 1 lb ground chicken
  • 3 cloves garlic, minced
  • 1 tbsp olive oil (for cooking)
  • 1 tsp paprika
  • 1 tsp fennel seeds
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Method

  1. In a large mixing bowl, combine the ground chicken, minced garlic, paprika, fennel seeds, salt, black pepper, and chopped parsley. Mix gently using a spoon or your hands until the seasoning is evenly distributed.
  2. Form the mixture into sausage-shaped links or small patties depending on your preference. Try to keep the sizes consistent so they cook evenly.
  3. Place a nonstick skillet on the stove over medium heat and add the olive oil. Allow the oil to warm for about 1 minute.
  4. Place the sausage links into the skillet and cook for about 5 to 6 minutes per side. Turn them occasionally until they become golden brown on the outside.
  5. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C) before serving.

Notes

  • Avoid cooking chicken sausages over very high heat to prevent them from drying out.
  • If making patties instead of links, reduce cooking time slightly.
  • These sausages can also be cooked in an air fryer at 375°F for 10 to 12 minutes or baked in the oven at 400°F for about 18 to 20 minutes.
