Ingredients

  • 2 cups milk (whole milk recommended for creaminess)
  • 1/4 cup granulated sugar
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • 2 ounces dark chocolate, finely chopped
  • 1 tsp vanilla extract

Equipment

Method

  1. Mix the dry ingredients
In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt until evenly combined and lump-free.
  2. Add milk
Slowly pour in the milk while whisking continuously to create a smooth mixture.
  3. Cook the pudding
Place the saucepan over medium heat. Cook, whisking constantly, for 5 to 10 minutes until the mixture thickens and begins to gently bubble.
  4. Finish with chocolate
Remove the pan from heat. Stir in the chopped dark chocolate and vanilla extract until fully melted and the pudding looks glossy and smooth.
  5. Cool and serve
Pour the pudding into serving bowls or dessert cups. Let cool slightly before serving warm, or refrigerate for a thicker texture.

Notes

  • The pudding will continue to thicken as it cools.
  • If lumps form, whisk vigorously or strain before serving.
  • For extra shine, stir gently after adding chocolate rather than beating.
