  • 2 slices whole grain bread (or sourdough, thick-cut)
  • 1/2 cup cottage cheese (full-fat or low-fat)
  • 1 pinch sea salt
  • 1/2 banana, sliced
  • 1/4 cup fresh strawberries, sliced
  • 2 tbsp blueberries
  • 1 tbsp honey
  • 1/2 tsp cinnamon
  • 1 tbsp peanut butter
  • 1/4 avocado, mashed (optional)
  • 1 large egg (scrambled or fried) (optional)
  • 2 tbsp shredded mild cheddar cheese (optional)
  • 2 tbsp cherry tomatoes, sliced (optional)
  • 1 tsp olive oil (optional)
  • pinch black pepper (optional)

Method
 

  1. Place the whole grain or sourdough slices in a toaster. Toast until golden brown and slightly crunchy. Thick-cut slices work best for holding toppings.
  2. While the toast is still warm, spread ¼ cup cottage cheese evenly over each slice.
  3. Add a small pinch of sea salt for flavor balance.
  4. For Sweet Cottage Cheese Toast:
    Top with banana, berries, or apple slices. Drizzle honey and sprinkle cinnamon if desired.
    For Savory Cottage Cheese Toast:
    Add mashed avocado, scrambled egg, or shredded cheese. Season with black pepper.
  5. Serve warm for best texture and flavor.
