Ingredients
  

  • 1 lb (450g) ground beef
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups enchilada sauce (divided)
  • 8 medium tortillas (corn or flour)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 tbsp oil (for cooking)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp chili powder (optional)

Method
 

  1. Heat oil in a large skillet over medium heat. Add ground beef, chopped onion, and garlic. Cook until the beef is browned and fully cooked.
  2. Add salt, black pepper, and chili powder. Pour in 1 cup enchilada sauce and stir well. Let it simmer for 2 to 3 minutes.
  3. Lay tortillas flat and spoon a portion of the beef mixture into the center of each.
  4. Roll each tortilla tightly and place seam-side down in a greased baking dish.
  5. Pour remaining 1 cup enchilada sauce over the enchiladas. Sprinkle shredded cheese evenly on top.
  6. Bake in a preheated oven at 375°F (190°C) for 20 to 25 minutes, or until the cheese is melted and bubbly.
