Ingredients
  

  • 6 large eggs
  • 2 tbsp cooking oil
  • 1 medium onion, finely chopped (about 1 cup)
  • 2 medium tomatoes, finely chopped (about 1½ cups)
  • 1 tsp ginger-garlic paste (optional but recommended)
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 to 1 tsp red chili powder (adjust to taste)
  • 1/2 tsp garam masala
  • Salt to taste
  • 1 to 1½ cups water (adjust for gravy thickness)
  • 1 tbsp chopped fresh coriander (optional, for garnish)

  1. Step 1: Boil and Prep the Eggs

    i) Place eggs in a pot and cover with water.
    ii) Bring to a boil and cook for 10 minutes.
    ii) Cool, peel, and set aside.Optional: Lightly score the eggs so they absorb more flavor.
  2. Step 2: Build the Onion-Tomato Base

    i) Heat oil in a deep pan over medium heat.
    ii) Add chopped onions and sauté until golden.
    iii) Stir in ginger-garlic paste and cook for 30 seconds.
    iv) Add chopped tomatoes and cook until soft and oil starts separating.
  3. Step 3: Add Spices and Simmer

    i) Lower the heat and add turmeric, coriander powder, red chili powder, and salt.
    ii) Mix well to avoid burning the spices.
    iii) Add water gradually and bring the gravy to a gentle simmer.
  4. Step 4: Add Eggs & Finish

    i) Add boiled eggs to the curry.
    ii) Simmer for 5 to 7 minutes so flavors combine.
    iii) Sprinkle garam masala and garnish with coriander.
    iv) Turn off heat and rest for 2 minutes before serving.
