Ingredients
  

  • 2 large chicken breasts (boneless, skinless)
  • 8 oz pasta (penne, fettuccine, or spaghetti)
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • 3/4 cup parmesan cheese (freshly grated)
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/4 cup reserved pasta water
  • 2 tbsp fresh parsley (chopped, for garnish)

Method
 

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente according to package instructions.Reserve ¼ cup pasta water, then drain and set aside.
  2. Season chicken breasts with salt, pepper, and Italian seasoning.
    Heat olive oil in a large skillet over medium heat. Cook chicken for 5 to 6 minutes per side until golden and fully cooked.
    Remove, rest for a few minutes, then slice into strips.
  3. In the same skillet, melt butter over medium heat.
    Add minced garlic and sauté for 30 to 60 seconds until fragrant.
  4. Pour in heavy cream and bring to a gentle simmer.
    Add grated parmesan cheese gradually, stirring continuously until melted into a smooth, creamy sauce.
  5. Add cooked pasta and sliced chicken back into the skillet.
    Toss everything together until well coated.
    Add reserved pasta water as needed to adjust consistency.
  6. Sprinkle fresh parsley on top and serve warm.
