  • 2 tsp baking powder

  • 2 tbsp almond flour (optional)
  • 2 tbsp oat flour (optional)
  • 1 tbsp rice flour (optional)
  • 1 tbsp buckwheat flour (optional)
  • 1 cup gluten free pancake mix
  • 1 egg
  • 3/4 cup milk
  • 1 tbsp melted butter
  • 1/2 tsp vanilla extract

Method
 

  1. In a large mixing bowl, combine the gluten free flour blend, sugar, baking powder, and salt.
    If using additional flours like almond flour, oat flour, rice flour, or buckwheat flour, add them to the bowl as well.
  2. Use a whisk to mix all ingredients thoroughly until evenly combined. This helps distribute the baking powder evenly throughout the mix.
  3. Transfer the prepared gluten free pancake mix into an airtight container or glass jar. Store it in a cool, dry pantry until ready to use.
  4. In a mixing bowl, combine:
    1 cup gluten free pancake mix, 1 egg, ¾ cup milk, 1 tablespoon melted butter, ½ teaspoon vanilla extract
    Whisk gently until a smooth pancake batter forms.
  5. Heat a nonstick skillet or griddle over medium heat.
    Pour small portions of batter onto the skillet to form pancakes.
    Cook for about 2 to 3 minutes until bubbles appear on the surface.
    Flip the pancakes and cook the other side until golden brown.
