  • 2 tbsp butter or margarine
  • 1/2 cup sour cream or plain yogurt
  • 1/2 cup leftover cooked vegetables
  • 1/2 cup cooked beans or lentils
  • 1/4 cup shredded cheese

  1. Preheat the oven

  2. Clean the potatoes
    Scrub the potatoes thoroughly under running water. Pat them completely dry using a kitchen towel.

  4. Season the potatoes
    Rub each potato lightly with olive oil, then sprinkle evenly with salt.
  5. Arrange for baking
    Place the potatoes directly on a baking sheet or on the oven rack with a tray underneath.
  6. Bake until fork-tender
