Ingredients
  

  • 1/2 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1 large egg
  • 1/4 cup unsweetened applesauce
  • 2 tbsp melted unsalted butter (cooled)
  • 2 tbsp plain full-fat yogurt
  • 1/4 tsp vanilla extract

  1. Preheat oven to 350°F (175°C). Lightly grease a small round cake pan and set aside.
  2. In a mixing bowl, whisk together the egg, applesauce, melted butter, yogurt, and vanilla extract until smooth.Add flour and baking powder, then mix gently just until combined. Do not overmix.
  3. Pour batter into the prepared pan and smooth the top.Bake for 20 to 25 minutes, or until the center springs back lightly when touched.
  4. Remove from oven and let the cake cool in the pan for 10 minutes.Transfer to a cooling rack and cool completely before frosting.
  5. For yogurt frosting: stir until smooth and thick.
    For cream cheese frosting: mix cream cheese and yogurt until soft and spreadable.
  6. Spread a thin layer of frosting over the cooled cake.
    Keep decorations simple and baby-safe.
