Ingredients
  

  • 1 lb ground beef (or ground turkey)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (14.5 oz) fire-roasted tomatoes
  • 1 small can (4 oz) green chiles
  • 2 cups beef broth (or chicken broth)
  • 1 packet taco seasoning (about 1 oz)
  • 1 packet ranch seasoning (optional, about 1 oz)

Method
 

  1. Heat a skillet over medium heat and cook the ground beef until browned. Break it apart with a spoon and drain excess grease.
    (Tip: You can skip this step for a dump-and-go version, but browning adds more flavor.)
  2. Transfer the cooked beef to the slow cooker. Add black beans, kidney beans, corn, diced tomatoes, fire-roasted tomatoes, green chiles, broth, taco seasoning, and ranch seasoning.
  3. Stir all ingredients gently to combine evenly.
  4. Cover and cook:
    Low: 6 to 8 hours
    High: 3 to 4 hours
  5. Stir the soup before serving. Taste and adjust seasoning if needed.
