  • 2 medium Zucchini (about 2½ cups grated)
  • 2 large Eggs

  • 2 tbsp Olive oil (for pan-frying)
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 tbsp Fresh herbs (parsley, dill, or basil)
  • 1/4 cup Grated cheese (Parmesan or mozzarella)

  1. Grate the Zucchini
    Grate the zucchini using a box grater and place it into a clean kitchen towel.
  2. Remove Excess Moisture
    Wrap the grated zucchini in the towel and squeeze firmly over a bowl or sink to remove as much liquid as possible. This step is crucial for crispy fritters.
  3. Prepare the Batter
    In a mixing bowl, combine the squeezed zucchini, eggs, flour, salt, pepper, and optional herbs or cheese. Mix until just combined.
  4. Heat the Pan
    Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  5. Cook the Fritters
    Scoop about 2 tablespoons of batter per fritter into the pan. Flatten slightly. Cook for 2 to 3 minutes per side until golden brown and crisp. Repeat with remaining batter, adding more oil if needed.
  6. Serve Warm
    Transfer cooked fritters to a plate and serve immediately for best texture.
